Have you ever tried fennel salad? I haven't until a few weeks ago. A friend of mine served this salad as an appetizer and then I made it at home. The salad was a huge hit! So today I share the worlds best recipe for fennel salad.
WHAT YOU NEED (serves two as a healthy lunch with bread or for four as an appetizer)
- 2 fennel
- 1dl (around 1/2 cup) olive oil
- 1 lime
- 50g Parmesan cheese (in one piece)
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
STEP ONE: remove the stems and the green stuff from the fennel. You won't need the stems anymore but chop the green stuff and put it in a small bowl for later use.
STEP TWO: cut the fennel in half
STEP THREE AND FOUR: put away the first slice
STEP FIVE: cut the fennel into thin slices
STEP SIX: heat a pan with the olive oil and add the fennel. Cook it for 20-25 minutes over medium to high temperature.
STEP SEVEN: squeeze the lime
STEP EIGHT: take your peeler and slice your Parmesan into thin pieces. You can also use a knife for this step but make sure to cut very thin pieces.
After 20-25 minutes your fennel should look like this. Brown pieces are required.
STEP NINE: remove the pan from the stove top and add salt and pepper (around 1/4 tbs each).
STEP TEN: put the fennel onto two plates. Make sure to not add all the oil from the pan. A little bit is okay, but not too much. Now let it cool down for a few minutes. (Clean the kitchen in the meantime)
STEP ELEVEN: pour the lime juice over your fennel, add the Parmesan shavings and the chopped green stuff.
